Shrove Tuesday…Time For Pancakes!

Looking forward to some pancakes this Tuesday but fancy something a bit different?

Grain-free diets are growing in popularity due to increased awareness of intolerances/sensitivities, as well as more interest surrounding gluten-free and Paleo diets.

Below are some pancakes made without using conventional flour…give them a go and see what you think!

 

Coconut & Almond Pancakes

Ingredients:

  • 2 eggs
  • 70g almond flour
  • 120ml coconut milk
  • 2 teaspoons cinnamon
  • 100g blueberries
  • 1 teaspoon coconut oil
  • Coconut yoghurt (optional)

Method:

Mix all the ingredients together until a similar consistency to batter. Heat coconut oil in a pan, add the batter and cook until it starts to brown on each side. Serve with extra blueberries on side and coconut yoghurt.

 

Nutty Banana Pancakes

Ingredients:

  • 2 ripe bananas
  • 1 egg
  • 1 tablespoon almond butter
  • 1 teaspoon coconut oil

Method:

Mash the bananas and combine with the egg and almond butter into a batter. Heat the coconut oil in a pan over a medium heat and use around a quarter of the mixture per pancake. Flip once they start to bubble and the edges turn brown.

 

Chocolate & Vanilla Pancakes

Ingredients:

  • 140g almond flour
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 1/2 tablespoon honey
  • 1/4 baking powder
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon cocoa powder
  • Pinch of salt
  • 1 teaspoon coconut oil

Method:

Heat coconut oil in the pan, combine the other ingredients into a batter and heat until golden on each side. Serve with a drizzle of honey.

 

Banana & Chia Seed Pancakes

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1 teaspoon chia seeds
  • 3 teaspoons coconut oil
  • Pinch of salt
  • 1/2 teaspoon baking powder
  • Handful of blueberries & pecan nuts (optional)

Method:

Mash 3/4 of the banana and beat with the egg. Stir in the chia seeds, baking powder and salt.

Heat coconut oil in the pan and use roughly 60ml of mixture per pancake. Serve with the rest of the banana on the side with optional blueberries and pecans.

All of these pancakes also make a great breakfast, snack or dessert any other time of the year…enjoy!
